Vegetable Frittata
Try One For Breakfast, Lunch, or Dinner

If you know how to put together a frittata you will always have a tasty nutritious meal in a hurry to fall back on. All you need are some eggs and veggies and you can make make a great dinner that includes protein, fiber, and dairy.

What Is A Frittata?

A frittata is an egg dish that can be made on the stove or in the oven. It can be eaten hot or at room temperature. It's great for beginners and gourmet cooks alike.

It's beauty is that it can be made from whatever you happen to have in the fridge. You can keep it simple or jazz it up with spices and herbs. It is only limited by your imagination, but the basic version is delicious as well.

You can make an individual frittata or a frittata for a group. It is usually sliced like a pie, or if you use a baking dish, it's cut into squares. A slice or square is convenient to take to work for lunch.

Basic Frittata Recipe

I try to keep my frittatas more vegetables than eggs. The vegetables you choose give each frittata you make a unique zing.

Start with raw or cooked vegetables. If you get into the practice of cooking vegetables ahead, in bulk, so that you always have them around your frittata can be just minutes away.

Two or three eggs and several heaping cups of vegetables will feed two as a main dish or more than two as an appetizer or snack.

  1. Put a little olive oil in a skillet and saute some onion until it softens. Add salt and pepper.
  2. Add the vegetables and cook until they are heated through. If you started with raw vegetables, this step may take longer. If you are using spinach or other greens, this step is fast.
  3. Add herbs when the vegetables are cooked or heated through. This is also a good time to throw in a little cheese. I like low-fat feta cheese, but you can use any of your favorites.
  4. While the vegetables are cooking, beat the eggs and add salt and pepper to them.
  5. Lower the heat, and pour the eggs over the vegetables and cook them undisturbed until the eggs are set.
  6. You can also take the pan and put it under the broiler to set the top more quickly, but it's not necessary.
  7. Cut into wedges and enjoy.

A Frittata As A Bake-Ahead Casserole

  1. Spray an oven-proof baking dish with olive oil cooking spray.
  2. Fill the baking dish with lots of the vegetables of your choice. Vegetables should be pre-cooked and cooled.
  3. Beat the eggs. Add salt and pepper.
  4. Add cheese if you are using it, although it is not necessary.
  5. Pour the eggs over the vegetables and bake at 325 until the eggs are set. Start checking after 20 minutes although it can take longer depending on the quantity of eggs and vegetables and the temperature of the ingredients before baking.
